to Lucy's Dairy at Folly Farm, Kingswood. The milk processing
business is run by Chris & Lucy Simmons and we are the
third generation of Simmons' to farm here. Chris's grandparents
moved here in 1939 having farmed at Malmesbury and previously
at Cattybrook Farm, Almondsbury. It was at Cattybrook
Farm going back another generation, that Chris's great-grandfather
used to deliver milk from a churn, on the back of a horse
drawn cart which the local people would collect using jugs.
At this time the milk would have been unpasteurised and unchilled
so deliveries were often twice a day.
Our whole milk is non-homogenised, this means that it does not go through a process which breaks the fat particles into smaller particles so they mix into the milk in a standard way. Therefore the whole milk will have a cream plug on top of the milk as the cream naturally rises. Unless you want the cream on your cornflakes, we would advise that you shake the milk before use to disperse the cream into the milk.
We will be selling pasteurised milk and cream from our herd of 270 cows. The milk and cream will have been produced from start to finish on our farm, with the cows being fed by Chris, milked by him, his Dad and our staff and the raw milk processed by Lucy.
